GraphOrg docs

GraphOrg maps people, teams, departments, tools, technologies, services, infrastructure, documentation, ownership, and dependencies so new employees, consultants, and approved AI agents can understand the organisation before working. This Mintlify site is the public / browsable docs surface. It is seeded from the repo docs/ folder. Product UI lives in apps/web; full architecture and ADRs stay in Linear.
